1. Preheat oven to 350 degrees.

2. Combine flour, baking soda and cinnamon in a bowl.

3. Beat the eggs, and mix in sugar, oil and carrots.

4. Gradually mix the flour mixture in with the car

rot mixture.

5. Pour into a greased 9x5-inch loaf pan and bake

for 55-60 minutes.



1 1/2 cups whole wheat flour ( or white)

1 teaspoon baking soda

1 1/2 teaspoon cinnamon

2 eggs

3/4 cup sugar

1/2 cup canola oil (or vegetable)

1 cup carrots, shredded fine
