Fiesta bean & potato salad is easy to make. Beans are also a great source of fiber, protein, iron, and vitamin B.



  • 3 potatoes, cut into chunks
  • 3 tablespoons vegetable oil
  • 2 1/2 tablespoons lime juice
  • 1 1/2 teaspoons chili powder
  • 1 cup salsa
  • 2 cups cooked black beans
  • 2 cups corn
  • salt and pepper to taste

  1. In a large pot, add potatoes and cover with water. Bring to a boil and cook for 12 minutes, or just until tender. Drain and cool.
  2. In large bowl, mix together oil, lime juice and chili powder. Add potatoes.
  3. Stir in salsa, black beans and corn.
  4. Toss gently to combine. Add salt and pepper to taste.
  5. Serve hot or cold and enjoy!
  6. Refrigerate leftovers.
